These cookies have been all the rage! Light fluffy and just the right amount of sweet. We tend to shy away from using margarine in baking. Typically we use coconut oil, but I needed a change in taste! Grapeseed oil was the perfect solution for a very neutral flavored oil.

~We used 1 Cup of granulated sugar and no brown sugar and mixed a combination of spelt and white whole wheat flour together.

This has been a favorite lately with raspberry jam! We also enjoy the taste of almond butter in the cookie, but feel free to use any nut butter.

~My only mistake with the first round of these, was not enough jam to cookie ratio! If you enjoy the jam flavor, make a wider thumbprint whole in the cookie so it can hold more jam and create more of a balanced ratio!
